Poussin, sometimes called “the veal of chicken”, are small, all-white-meat young chickens with mild flavored, succulent meat. Because of their small size, two poussin will make a hearty single serving. Both whole birds (perfect for roasting) and semi-boneless birds are available. Semi-boneless poussin have had their torso bones removed for easier stuffing, searing, or grilling.
