Pheasants are elegant, mild flavored birds once served at royal banquets. Their flavor is chicken-esque, and their name draws the eye on fine dining menus. Because they tend to be lean, they are often barded (wrapped with bacon or pancetta), basted, or brined prior to cooking. In addition to roasting whole, they can also be broken down into legs, thighs, wings and breasts similarly to chicken.
