CARIBOU

NILGAI ANTELOPE

Nilgai Antelope is wild harvested from feral herds in Texas. Antelope has a milder flavor than many game meats, with a tender, almost veal-like texture.

ALLIGATOR

Alligator meat can be separated into two types – the more mild & tender tail meat and the darker, stronger flavored leg & body meat. Alligator meat is typically fried or stewed.

TURTLE

Harvested from wild fresh water snapping turtles in the US. Turtle meat is typically used in soups & gumbo.
