Lamb tenderloins are small, thin portions, around 3 ounces each, making them ideal for quick-fire applications such as appetizers or as part of a multi-course menu. The most tender cut on the entire animal, these tenderloins have a very mild lamb flavor well suited to spice rubs or sauces. An uncommon size and cut, tenderloins are very easy to work with and prepare. They're excellent grilled or skewered for kebabs, satay, souvlaki and yakitori.

Applications: sear or grill whole or cubed & skewered.
