SPANISH QUAIL

Urgasa Quail is a family-owned business that has been raising quail in Catalonia in northern Spain for over 30 years. They raise their quail by hand, cage free on a cereal-rich diet, minimizing stress & carefully selecting only the best. The resulting meat is luxuriously tender with a sweet, nutty flavor.

Quail’s small size lends itself to a variety of applications served whole or split. Try roasting whole quail and serving two to an entrée, or splitting a grilled semi-boneless quail for a lighter meal with a salad.

Innovative Appetizer-Ready Cuts

Urgasa Quail is available in three cuts that are tailor-made for appetizer and hors d’oeuvre applications. Boneless quail breasts & leg quarters can be seared, fried, or skewered & grilled. Frenched “lollipop” legs are perfect for catered passed appetizers.



SQUAB

Squab (farm raised pigeon) may be the first poultry domesticated for human consumption. This delicacy has dark, succulent meat. Our squab is raised on a vegetarian feed & spring water diet without sub-therapeutic antibiotics, chemicals or hormones.



POUSSIN

Sometimes referred to as “the veal of chicken” – poussin are young, all white meat chickens that are moist and delicate. Raised on a vegetarian diet without hormones or sub-therapeutic antibiotics.

GUINEA FOWL

Guinea fowl are a very lean, tender and flavorful bird with meat that is darker than chicken or pheasant. Marx Imports offers guinea fowl that are grain-fed, free range, raised without antibiotics, hormones or growth stimulants, and air-chilled.

POULET ROUGE

Poulet Rouge (aka Red Heritage Chicken) are a heritage French breed known for its superior, richer flavor. Ours are raised free range on grain without growth stimulants and then air-chilled.

WHITE PHEASANT

A regal bird highly prized in Europe, pheasants are succulent, lean, and delicately flavored. Our white pheasants are raised free range on a grain diet and air chilled. No growth stimulants are used.

GRAIN-FED GOOSE

Goose combines dark meat and rich fat similar to duck with size and presentation in a similar range to turkey. A traditional celebration bird in Europe.

OSTRICH

Although ostrich meat is poultry, its taste, texture and color all evoke beef. Ostrich is extremely lean, so it cooks very quickly with minimal shrinkage and is a healthy alternative to commodity beef.
